Homemade Cookies.


 

Baking homemade cookies is something
I don't do very much anymore. Part of it
is time ~ when I was a mom at home,
baking fit in to my day with my littles.
But now they're grown, life is so busy
with work and projects, and cookies
have taken a back seat without littles
in the cottage to gobble them all down.
I was excited last week with our "down
the lane neighbors" coming for dinner as
they have 3 kids and the cookies would
be so needed. They loved them and I
did send home some goodie bags. The
cookies were a hit but I wish I had sent
home more as we still have cookies a
full week later! Next time, more will go!

Christmas Dinner.


We decided this year to not cook a turkey as it was
just a smaller than usual crowd for the 25th. We had
company after the big day, and more to come but for
the actual day, we enjoyed a roasted chicken with
amazing gravy, fresh peas, mashed rutabaga, mashed
potatoes, stuffing, cranberry sauce, pickles and fresh,
homemade buns. For after, we had a variety of squares,
cookies and tarts. The best part was we didn't have a
lot of leftovers that may have gotten thrown out later.
A much easier dinner and so very good.  Scrumptious!!

Homemade Peanut Butter Cups.


Mixing up the peanut butter so it's soft
and easy to work with. So much fun!


Adding in the icing sugar that brings
some stability and extra sweetness.


Mmmm! I could just eat all of this but
we promised to make pb cups for others.


Milk chocolate all melted and ready to fill the
silicone molds. We have to work fast before it sets.


Two new molds this year ~ tiny and very
cute gingerbread men to fill up and try.


And sweet little snowflakes. These were
messy but the perfect size for gifting.

Homemade with Love.


Living a lifetime with crazy food allergies means that food is always an issue. I'm thankful on a daily basis for an incredible man who loves to cook and keeps me fed with his creations. He always makes the  majority of our dinners from scratch, or as my gramma would say "homemade with love." When I was growing up, I really never had the chance to try new foods and homemade was saved for Sunday dinners or special holidays. The rest of the time, I ate the same things over and over again, and eating out was not really an option. Lots of packaged food though, as my mom could read the label and know I could eat it without spending the rest of the night in the ER. I grew to hate eating, which started an eating disorder and many years of battling my then skeleton body. My dh finally came along and made me healthy and whole by figuring out what he could make that I wouldn't get sick after eating. Now food isn't something I hate. And even though it still hurts when I eat, food is now enjoyable. The best though is when he creates from scratch, my "homemade with love" meals like the pizza that after decades of never being able to eat pizza, I could now eat it every day! Fresh dough from the Italian Centre, fresh grated mozzarella, rosemary ham, alfredo sauce and fresh pineapple chunks. Oh so good! I can't wait for dinner tonight!

Homemade Twix.


We had fun this year trying a few
new desserts for Christmas Dinner.


This one promised to be very similiar
to a Twix Chocolate Bar ~ my favorite.


Not too hard to make. It was all in the
timing and making sure the base was cool.


The layers once all was set and we
could cut. The verdict? Yes, a Twix!

Homemade with Love.

 When the weather begins to change in the Fall,
my big soup comes down from the upper cupboard.


I bring out my cookbooks and start searching the
web for the best and easiest soup recipes I can find.


Recently, I found this one and have made it enough
times now, I don't even have to look at the recipe.


I don't know what or where "Panera" is but this
soup is worth the trip if there is one near you.


Or you can just get out your big soup pot from the
upper cupboard and start chopping veggies. Mmmm!

Mmmm! Soup!!

My sweet man makes me homemade soup whenever I'm under the weather. I love how he adds in extra veggies, freshly cooked organic chicken & big chunks of real marble cheese. And lets it steep & simmer until it's just the perfect consistency, thick & full of flavor that takes skill to make it just right. 


I have no doubt that Chicken Noodle Soup truly helps congestion. I also am entirely convinced that the act itself of creating said dish helps the recovery process as well. I'm sure there is a study somewhere!


I may not feel well but I do feel loved!
